Recipe Ingredients for Strawberry Sponge Gateau

5 large eggs
1/2 c Splenda, granulated
2 c all purpose flour
2 c strawberries
10 tbs Strawberry Sugar Free Preserves
8 servings COOL WHIP - WHIPPED TOPPING - FREE
1/2 tsp vanilla extract

Recipe Directions for Strawberry Sponge Gateau

  1. Heat the oven to Gas 4, 180C, 350F. Line a 9" cake tin with baking paper. Whisk the eggs with an electric whisk until white and creamy. Continue to whisk while slowly adding the sugar. Followed by vanilla extract. Sift flour and quickly fold into mixture. Spoon into cake tin and bake in the oven for 35 minutes, until firm to the touch.

  2. Allow the cake to cool in the tin for 5 minutes, then remove and peel away the baking paper. Place on a wire rack until completely cool.

  3. Using a large knife, carefully slice the cake into 2 equal-sized rounds. Place the bottom slice of cake on a serving plate, spread with 2 tbs of cool whip then 5 tbs strawberry jam, top with sliced strawberries, add a 1 tbs cool whip on top. Add last cake slice on top add cool whip and jam. Decorate strawberries as desired.
