Strawberry Sponge Cake Recipe

Dr. Oetker Clear Glaze is used to keep the fruit on top fresh and in place. Whip cream can be used instead, but the glaze is the lighter option.

Recipe Ingredients for Strawberry sponge cake

2 eggs
2/3 cup sugar
1/4 cup water
1 teaspoon vanilla
1/2 cup all purpose flour
1 teaspoon baking powder
1 pint strawberries

Recipe Directions for Strawberry sponge cake

  1. Preheat oven to 375.

  2. Beat the eggs until lemony colored foam.

  3. Slowly add the sugar. The eggs will turn lighter in color and the foam will tighten up.

  4. Slow the mixer down and add the water and vanilla slowly.

  5. Bring the mixer back up to speed once the water has been added to make sure everything is mixed.

  6. Slow down the mixer a little to add the flour in slowly along with the baking powder.

  7. Scrape down the sides of the bowl. Bring the mixer all the way up and grease and dust the flan pan.

  8. Bake the cake for 12 to 15 minutes.

  9. Gently separate the cake from the sides of the pan, flip it over and let it cool until cool to the touch.

  10. Wash and hull the strawberries. Cut into slices if you want and layer on top. Other berries work just fine.

  11. Add glaze, Dr. Oetker is what I use, if you want to make it last longer and keep the fruit in place.
