I came up with these for Thanksgiving so that I could have a little something special with the meal.

Recipe Ingredients for Strawberry Shortcakes (Low Carb)

5 T melted butter or oil
3 Egg, White
1/8 tsp. sea salt
2 T honey
1 tsp. vanilla extract
1/4 cup Coconut Flour

Recipe Directions for Strawberry Shortcakes (Low Carb)

  1. Mix all ingredients together and divide among 4 mini cake tins.

  2. Bake at 350 degrees F. for 20-25 minutes.

  3. Cut muffins in half crosswise and top with sliced strawberries that have been tossed with honey to taste and a dash of vanilla extract.
