Our first try at S/R pie. Bit high in fat. Well, that's pie for you.

Recipe Ingredients for Strawberry Rhubarb vegan pie

2 1/2 cups rhubarb
4 cups strawberries
4 tablespoons honey
1 teaspoon vanilla extract
48 grams dates
1/8 teaspoon salt
5 tablespoons flour
1 cups organic whole wheat pastry flour
3 ounces Non-Gmo Earth Balance Buttery Spread

Recipe Directions for Strawberry Rhubarb vegan pie

  1. Blend dates with 1/4 cup water on high until all chunks are gone. Bring to boil over medium heat while stirring. Reduce heat to low and stir continuously until thickened into syrup.

  2. For filling: mix rhubarb and strawberry pieces in a bowl with honey, vanilla extract, salt, 5 tablespoons of flour, and dates syrup.

  3. For Crust: cut buttery spread into flour. Slowly add up to 1/4 iced water until consistency looks right. Press into bottom of 9" pie pan.

  4. Add filling.

  5. Preheat oven to 400 degrees Fahrenheit. Bake at 400 degrees for 10 minutes. Reduce heat to 375 degrees and bake an additional 45 minutes.

  6. Remove from oven. Let cool before cutting.
