A treat for those of use who love Strawberry-Rhubarb pie but don't want the extra calories.

Recipe Ingredients for Strawberry Rhubarb Sorbet

1 lb rhubarb, thinly sliced
1 pint strawberries, heaping, hulled and halved
1 cup sugar

Recipe Directions for Strawberry Rhubarb Sorbet

  1. Mix rhubarb and sugar. Let sit at least one hour.

  2. Bring rhubarb-sugar mixture to a gentle boil. Reduce heat, cover, and simmer 10-15 minutes, until rhubarb is tender.

  3. Put strawberries in a food processor or blender. Add rhubarb mixture. Process until the mixture is a smooth puree. Pour into a bowl and chill thoroughly.

  4. Process fruit mixture in an ice-cream maker according to the manufacturer's directions.
