Strawberry Rhubarb Recipe

The crumble is the British version of the American crisp. This one features the classic combination of tart rhubarb and sweet strawberries, topped with a crunchy oat-and-hazelnut streusel. A scoop of ice cream is the perfect finishing touch.

Recipe Ingredients for Strawberry Rhubarb

1/4 cup All Purpose Flour
0.67 cup Sugars, Granulated
0.5 cup Sugars, Granulated
6 tbsp Butter
1/2 cup Old Fashioned Oats
0.5 cup, chopped Hazelnuts Or Filberts
4 cup, halves Strawberries
12 oz Rhubarb

Recipe Directions for Strawberry Rhubarb

  1. Combine flour, 2/3 cup sugar, and salt in medium bowl; whisk to blend.

  2. Add butter.

  3. Rub in with fingertips until mixture sticks together in clumps.

  4. Mix in oats and nuts.

  5. Cover and chill.

  6. Preheat oven to 375F.

  7. Butter 11 x 7 x 2- inch glass baking dish.

  8. Place 1/2 cup sugar in large bowl. Scrape in seeds from vanilla bean; whisk to blend well.

  9. Add strawberries and rhubarb to sugar in bowl; toss to coat well. Scrape fruit filling into prepared baking dish.

  10. Sprinkle oat topping evenly over filling.

  11. Bake crumble until filling bubbles thickly and topping is crisp, about 45 minutes.

  12. Let cool 15 minutes.

  13. Spoon warm crumble into bowls. Serve with ice cream.
