Developed from a recipe I found when searching for healthy rhubarb recipes. It's a much healthier alternative to pie, and the oats are so good!

Recipe Ingredients for Strawberry Rhubarb Oat Crunch

4 cup, diced Rhubarb
1 pint as purchased, yields Strawberries
1 cup Rolled Oats
24 packet SPLENDA No Calorie
1 tsp Cinnamon, Ground
3 tbsp vegetable oil

Recipe Directions for Strawberry Rhubarb Oat Crunch

  1. Chop rhubarb and strawberries. Toss together with 1/2 cup Splenda. Pour into a shallow baking dish.

  2. In a separate bowl, mix the oats, remaining splenda, cinnamon and oil. Spread the oat mixture over the chopped fruit.

  3. Bake about 45-60 min at 350F, until fruit is cooked down and oats are turning golden.
