Recipe Ingredients for Strawberry Rhubarb Crumble

2 cup rhubarb
1 lb strawberries
1 c quick oats
1 c granulated sugar
3/4 c light brown sugar
1/2 c flour
3 tbs corn starch
1 tbs vegetable oil
1/2 stick salted butter
2 tbs fresh lemon juice

Recipe Directions for Strawberry Rhubarb Crumble

  1. Preheat oven to 375F.

  2. Chop rhubarb into 1/2" pieces. Add 1/2 c. sugar and let sit.

  3. Hull and half strawberries. Add berries, other 1/2 c sugar (you can cut this a bit if your berries are pretty ripe), cornstarch, and lemon juice to rhubarb mixture. Pour into pie pan or 9x9 glass pan.

  4. Use a pastry cutter to cut butter and vegetable oil into quick oats, flour, and light brown sugar. Use less topping if you like.

  5. Cover fruit mixture and place in oven. Cook for 30 minutes. After 30 minutes lower oven temperature and cook for another 30 minutes, until crust begins to brown.

  6. Let cool before serving.

  7. Word of advice: Crumble will bubble and may overflow. Do not overfill your baking dish.
