Found this online, wanted to make it but too high in cals/sugar for me... subbed the butter, sugar, etc.

Recipe Ingredients for Strawberry Rhubarb Cobbler

4 1/2 cups rhubarb
1 1/2 cups strawberries
1/4 cup sugar
1/4 cup
2 tbs of tapioca
1 tsp of grated orange peel
2 tbs Splenda granular
1 cup
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup
1/4 cup
2 egg whites

Recipe Directions for Strawberry Rhubarb Cobbler

  1. In a bowl, mix the rhubarb and the strawberries with the sugar, molasses, tapioca, and orange zest. Let sit to macerate for 30 minutes to an hour.

  2. In a medium bowl, combine 2 Tablespoons of Splenda, the flour, baking powder and salt. Cut the Brummel & Brown in with a fork or pastry blender until the mixture resembles coarse crumbs. Stir in the soy milk and egg whites until just moistened.

  3. Pour fruit into a 2-quart casserole dish. Drop the batter on the fruit. Bake in a 350F oven for 35 minutes until cobbler crust is golden brown.

  4. Serves 6. Serve with whipped cream (optional).
