A healthy homemade applesauce with strawberries and rhubarb. No sugar necessary, but of course, if you like super sweet, add any sweetener of choice, or decrease amount of rhubarb and increase strawberries, or make sure your apples are very sweet. I used a variety of apples, some sweeter than others, and a mixture of firm and soft apples. Using some firm apples is crucial if you like a chunky applesauce as I do, and make sure not to over-cook or you will get much less chunks! Delicious warm or cold! **Each serving is calculated for 1 Cup. Recipe makes 7 - 1 Cup servings.

Recipe Ingredients for Strawberry-Rhubarb Applesauce

8 cups chopped Apples
3 1/2 cups chopped Rhubarb
2 cups diced Strawberries
1/2 tsp pure vanilla extract (double strength - if not double strength, use 1 tsp.)

Recipe Directions for Strawberry-Rhubarb Applesauce

  1. Peel apples.

  2. Chop apples and place in large pot (I used a dutch oven pot).

  3. Place apple peelings and water in a blender and blend.

  4. Pour blended peelings into pot and stir with apples.

  5. Bring pot's contents to a boil then reduce heat to simmer.

  6. When apples are near done, add chopped rhubarb (leave the peel on - it gets so soft that you can't even tell it's in there).

  7. Let simmer just until rhubarb starts to soften.

  8. Remove from heat.

  9. When cooled slightly, add strawberries (I used frozen, and had them mostly thawed out... if you use fresh, you can probably throw them in as soon as you remove from heat to help them soften. The frozen ones are already very soft upon thawing and you want to leave them in chunks).

  10. Depending on consistency, let sit either covered (to retain the moisture) or uncovered (if you want the sauce to thicken a bit more).

  11. Mash any large chunks very slightly with a potato masher. (OR if you do not like chunks in your applesauce, puree with immersion blender, or transfer to regular blender and puree.... may need to do this in batches).

  12. Store in refrigerator.
