Recipe Ingredients for Strawberry Oatmeal Bread with Lemon Glaze

1/2 cup whole wheat flour
1/2 cup quick oats
1/2 cup bread flour
1 cup sugar
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp cinnamon
2 egg whites
1/3 cup Smart Balance oil
1/2 cup vanilla soymilk
2 cups strawberries, sliced
1/2 cup powdered sugar
1 tbsp lemon juice

Recipe Directions for Strawberry Oatmeal Bread with Lemon Glaze

  1. Preheat oven to 350 degrees, and spray a large loaf pan with non-stick cooking spray.

  2. Combine flours, oats, sugar, salt, baking soda, baking powder and cinnamon in a large bowl.

  3. Add egg whites, soymilk and oil. Stir.

  4. Fold in strawberries.

  5. Pour into prepared pan, and bake at 350 degrees for 50-60 minutes, or until toothpick inserted into center of loaf comes out clean.

  6. Allow to cool.

  7. Stir lemon juice and powdered sugar to form a glaze. Drizzle over top of loaf.
