Recipe Ingredients for Strawberry Oat muffins

1 cup dry Old Fashioned Quaker Oats
1 serving Fat Free Skim Milk
1 tbsp Lemon Juice, Canned Or Bottled
1 cup Organic Whole Wheat Flour
1 Teaspoon Baking Powder
0.5 tsp Baking Soda
1 tsp Salt, Table
1 large Egg, Whole
0.25 cup Olive Oil
0.25 cup Olive Oil
0.75 cup, unpacked Sugars, Brown
1 tsp Vanilla Extract

Recipe Directions for Strawberry Oat muffins

Preheat oven to 375 F. Put the lemon juice in a measuring cup & add enough skim milk to make 1 cup. Let sit 5 minutes. During this time, chop the strawberries & set aside. Add the oats to milk (now buttermilk substitute) & let sit another 5 minutes. In a medium bowl, combine the flour, baking powder, baking soda, and salt. In a large bowl, add egg, oil, brown sugar, & vanilla & blend. Stir in the chopped strawberries. Divide mixture between 12 paper lined muffin cups. Sprinkle with cinnamon if desired. Bake for 20-35 minutes or till toothpick inserted in the middle comes out clean (time varies depending on moisture of berries)
