Recipe Ingredients for STRAWBERRY OAT BREAD

229 grams Strawberries
52 g Zero Calorie Sweetener
2 serving CASA GIULIA FIG JAM
80 grams dry Old Fashioned Quaker Oats
145 grams Whole Grain Oat Flour
28 grams Wheat Germ, Toasted, Plain
31 grams Whole Wheat Pastry Flour
1 teaspoon Baking Soda
2 tsp Leavening Agents, Cream Of Tartar
1/2 tsp Sea Salt
8 oz Fa-yeh 0%
130 grams Cottage Cheese Free Nonfat
93 grams All Whites 100% Liquid Egg Whites Crystal Farms
2 tbsp Vegetable Oil, Canola
33 grams Cream Cheese Original
34 grams Creamy Cheese Fat Free
33 grams Figs, Dried, Uncooked

1/8 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp mace
1/8 tsp ginger
1/8 tsp black pepper
1/8 tsp orange peel

Recipe Directions for STRAWBERRY OAT BREAD

  1. HEAT OVEN TO 350 DEGREES. MIST A 9X9 SQUARE BAKING PAN WITH COOKING SPRAY AND SET ASIDE.

  2. IN A SMALL SAUCEPAN, COOK STRAWBERRIES ON MEDIUM HIGH FOR 10 MINUTES. ADD 2 TBSP. ORGANIC ZERO AND FIG JAM AND STIR. HEAT 5 MINUTES, UNTIL JAM IS MELTED AND ZERO IS DISSOLVED. REMOVE PAN FROM HEAT AND LET COOL 10 MINUTES. ONCE COOL, PLACE PAN IN FRIDGE FOR 10 MINUTES.

  3. MEANWHILE, IN A LARGE BOWL, MIX OAT MEAL, FLOURS, WHEAT GERM, BAKING SODA, CREAM OF TARTAR, AND SALT WITH WHISK UNTIL WELL INCORPORATED.

  4. TO A BLENDER, ADD YOGURT, COTTAGE CHEESE, EGG WHITES, 4 TBS RAW HONEY, REMAINING 2 TBS ZERO, AND DRIED FIGS. PUREE UNTIL SMOOTH, ABOUT 10 TO 15 SECONDS.

  5. IN A SMALL FOOD PROCESSOR OR CHOPPER, PUREE STRAWBERRY MIXTURE UNTIL BLENDED, BUT STILL CHUNKY ABOUT 15 TO 20 SECONDS. SET ASIDE.

  6. ADD YOGURT MIXTURE TO TO DRY FLOUR MIXTURE, AND MIX UNTIL DRY INGREDIENTS ARE JUST BARELY BLENDED. DO NOT OVER-MIX.

  7. POUR HALF OF THE OAT BREAD MIXTURE INTO PREPARED SQUARE PAN. THEN SPOON STRAWBERRY PUREE ON TOP , SWIRLING GENTLY. TOP WITH THE REMAINING OAT BREAD MIXTURE. PLACE IN OVEN AND BAKE 30-35 MINUTES, UNTIL A CAKE TESTER COMES OUT CLEAN WHEN INSERTED INTO OAT BREAD. LET COOL.

  8. MEANWHILE, PLACE CREAM CHEESE IN A SMALL GLASS BOWL AND MICROWAVE ON HIGH FOR ABOUT 10 TO 15 SECONDS. REMOVE FROM MICROWAVE AND STIR WITH SPATULA. MIX IN 1 TBSP RAW HONEY. IF MIXTURE SEEMS THICK ADD UP TO 1 TBS WATER, 1 TSP AT A TIME. DRIZZLE CREAM CHEESE MIXTURE OVER WARM CAKE. DIVIDE INTO 16 PORTIONS.
