Recipe Directions for Strawberry Mousse

In a bowl, add 3 tbsp of strawberries (sliced in half) and 1 tsp sugar. Cover and refrigerate. In a food processor or blender, puree remaining strawberries with 1 tsp of water. In a small saucepan, add the strawberry puree. Sprinkle gelatin over the puree and let stand 1 minute. Cook over low heat, stirring until completely dissolved. Set aside to cool. In a bowl, add well-chilled evaporated skim milk and, with mixer on high speed, beat until thickened and soft peaks form. Fold in yogurt and strawberry gelatin mixture. Mix well and spoon into serving bowl or parfait glass. Cover and refrigerate 5 to 6 hours until set. To serve, top with sliced strawberry mixture and low-fat whipped topping. Makes 1 serving.
