Recipe Ingredients for Strawberry Lavender Vinaigrette

1/2 pint strawberries, washed and tops cut off
1 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried tarragon leaf, crushed
1/4 teaspoon sugar, or more to taste
1 tablespoon Lavender Blossoms

Recipe Directions for Strawberry Lavender Vinaigrette

  1. Stir the blueberries, lavender blossoms and maple syrup in a large pot over medium heat until the berries pop, about 3-5 minutes. Cook for 5 more minutes and stir frequently. Remove the pot from the heat and let cool completely.

  2. In a food processor (or you could use a blender), combine the cooled berry mixture, vegetable oil, Dijon, and sugar and process for about 8 seconds. You may add more mustard to thicken the vinaigrette if needed. Add sugar to taste. Refrigerate for at least 2 hours. Serve over your favorite salad greens.
