As taught by Linda, from the liquid Certo box insert. NOTE: make only one batch at a time. Be accurate in measurements and times. This will make 4 1/2 pint jars. Put the jar containing the leftover parts in the fridge and eat immediately. 1 serving is 1 tbs.

Recipe Ingredients for Strawberry Jam, Homemade

3 7/8 cups strawberries (get about 2 quarts)
7 cups sugar
1 package certo
1/4 cup lemon juice

Recipe Directions for Strawberry Jam, Homemade

  1. Sterilize jars by washing in dishwasher, then keep them warm in the oven while you're making the jam. Wash the rings in the dishwasher too but you don't have to sterilize them any further. Linda arranges her jars on a tray (use a cookie sheet) and puts the whole thing in the oven so she can just lift it out onto the stovetop and the sheet doubles as a work surface.

  2. Boil the lids in a pot of water while making jam.

  3. Wash only enough berries for one batch by dumping them in a sink of cold water and swishing them around, removing them immediately to a colander over a bowl. Hull berries using a baby/small tea spoon, putting them in a small bowl and mashing them with a potato masher one layer at a time, then dumping the squashed berries into measuring cup until you reach 3 7/8 cups.

  4. Dump berries into a large/stock pot and stir in lemon juice and sugar.

  5. Bring to a boil and boil hard for one minute (set timer for this), stirring all the time. Liquid will foam up, which is why you need a very large pot.

  6. Remove from heat and stir in Certo. Continue stirring and skimming off as much of the foam as you can for 5 minutes.

  7. Pour into sterilized jars, put lids on finger tight, and set aside to cool, listening for the lids to pop to know all have sealed.
