This salad can be served as a side but is great just on its own, usually for dinner. I usually use light raspberry or cranberry walnut dressing, but this program didn't recognize them. It's still good with balsamic, and balsamic isn't necessarily bad, but light raspberry vinaigrette is a healthier alternative. Also, you can use feta instead of goat cheese, but they're pretty much the same in fat content and everything. This recipe is good because it has Vitamin A, Vitamin C, and Iron from the spinach, Vitamin C from the strawberries, Calcium and Protein from the goat cheese, and Protein and Omega-6's from the almonds. The major downfall of this recipe, however, is that it contains a lot of fat from the goat cheese, almonds, and balsamic. Most of this is the unsaturated or "good" fats, though.

Recipe Ingredients for Strawberry & Goat Cheese Salad

1 cup baby spinach
4 large strawberries, sliced
1 oz. goat cheese
1/4 cup slivered almonds
2 tbsp balsamic vinaigrette

Recipe Directions for Strawberry & Goat Cheese Salad

Wash the spinach, then put it in a large bowl. Then, wash the strawberries, slice them, and place them in the bowl. Crumble on the goat cheese and add in the almonds. Lastly, pour on the balsamic vinaigrette, mix with salad tongs, and enjoy!
