Crepes with sliced fresh strawberries and sweetened cream cheese filling. I totally should not be eating this.

Recipe Ingredients for Strawberry cheese crepes

1 egg
1/4 cup 2% milk
1/3 cup water
1 tablespoon olive oil
2/3 cup all-purpose flour
4 1/2 tablespoons white sugar
1 pinch salt
1 cup fresh strawberries, sliced
1/2 teaspoon vanilla extract
1/4 cup cream cheese
1/2 tablespoon butter

Recipe Directions for Strawberry cheese crepes

Mix egg, milk, water, olive oil, flour, salt, vanilla, and 1/2 tablespoon sugar until smooth. Slice strawberries and toss with 1 tablespoon of sugar. Blend cream cheese and remaining 3 tablespoons sugar in pan over low heat. Put a bit of butter in a large skillet over medium heat. When melter, ladle 1/4 of crepe batter into skillet and tilt it around to let it spread out as thin as possible. Let cook for a minute or two until you can slide a spatula under it easily and flip it over. When slightly browned on that side, slide onto a plate, spoon some of the cream cheese mixture onto the crepe in a line. Top cream cheese mixture with strawberries and roll crepe up.
