a gluten-free, sugar-free, egg-free strawberry bread

Recipe Ingredients for Strawberry Bread

1 cup buckwheat flour
1/2 cup sweet potato flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 tsp cinnamon
2 cups sliced strawberries
4 ripe bananas, mashed
2 tbsp olive oil
4 tbsp applesauce
1 tsp vanilla

Recipe Directions for Strawberry Bread

  1. preheat oven to 350F (175C)

  2. mix dry ingredients in mixing bowl

  3. using a hand-blender, puree the bananas, olive oil, applesauce and vanilla

  4. fold the strawberries and pureed ingredients into the dry ingredients

  5. grease and flour a 9x5x3″ loaf pan

  6. pour mixture into pan

  7. bake for 45-55 mins, depending on oven temperature, until a cake tester inserted into the center comes out clean and the top is golden

  8. remove from the oven and cool the pan on a wire rack for 5-10 minutes before removing the loaf from the pan
