This is a quick breakfast bread to make early in the morning

Recipe Ingredients for Strawberry Bread

2 teaspoons fresh strawberries
1 teaspoon all-purpose flour
2 teaspoons white sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon baking soda
1 teaspoons vegetable oil
1/2 eggs, beaten
2 teaspoons chopped pecans

Recipe Directions for Strawberry Bread

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Butter and flour two 9 x 5 inch loaf pans.

  3. Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.

  4. Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well.

  5. Blend oil and eggs into strawberries.

  6. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened.

  7. Stir in pecans.

  8. Divide batter into pans.

  9. Bake for 45 to 50 minutes, or until tester inserted comes out clean.

  10. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.
