Recipe Ingredients for Strawberry Banana Walnut Bread

1.5 cup Organic Brown Rice Flour
0.33 cup Tapioca Flour
0.094 cup (dry) (uncooked) Quinoa Organic Grain
0.33 tbsp Xanthan Gum
1 tsp Baking Powder
1 tsp Baking Soda
0.13 tsp Sea Salt
5 tbsp Extra Virgin Coconut Oil
4 packet SPLENDA No Calorie
1 tsp Vanilla Extract
2 large Egg, White
4 large (8" to 8-7/8" long) Bananas
1 fl oz Vanilla
0.67 cup Walnut Halves
1 cup, halves Strawberries

Recipe Directions for Strawberry Banana Walnut Bread

  1. Preheat oven to 350F. Line large loaf pan or 9″ cake pan with parchment paper.

  2. Whisk together the dry ingredients in a small bowl. Set aside.

  3. Cream coconut oil and Splenda or Truvia together.

  4. Add egg whites, mashed bananas, and vanilla extract. Mix until combined. Note: If you?re using frozen bananas, make sure the bananas are room temperature or else the coconut oil will harden up upon contact. You can warm it up by putting it in the warming oven in 1 minute increments. Give it a stir and repeat until there are no longer chunks of solid coconut oil in your batter. Also, be sure to bring your egg whites to room temperature for the same reason. You can place your eggs in a bowl of warm water for a few minutes to warm them up. Hardened coconut oil is a pain to unharden and may affect the texture/flavor of the bread.

  5. Mix in dry ingredients and almond milk until mostly combined. Then add strawberries and walnuts and mix until combined and evenly distributed throughout the batter. Add more almond milk if your batter is too thick (I didn't need it).

  6. Scrape batter into prepared pan.

  7. Cook for 45+ minutes for a cake pan and 1+ hour for a loaf or until an inserted toothpick comes out clean.
