Healthy whole wheat low fat muffins

Recipe Ingredients for Strawberry Banana Muffins

1/2 c Rolled Oats
1/2 c Egg Beaters
1/2 cup unsweetened applesauce
1/2 cup yogurt, low fat
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 bananas, large
2 cups whole wheat flour
1 teaspoon baking soda
1/2 tablespoon ground cinnamon
1 cup frozen strawberries
1/4 cup ground flax seed

Recipe Directions for Strawberry Banana Muffins

  1. Preheat the oven to 375 degrees

  2. Spray 12 large muffin cups, or line with paper liners.

  3. 2. Chop frozen strawberries in food processor & puree bananas

  4. 3. In a large bowl, whisk together the egg beaters, applesauce, yogurt, brown sugar, vanilla and bananas. Combine the flour, baking soda and cinnamon, flax, oatmeal; Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Spoon batter into muffin cups until completely filled.

  5. 4. Bake for 20 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.

  6. Add Nutmeg if desired
