Vegetarian strata with spinach, eggs and romano cheese

Recipe Ingredients for Strata with Spinach

3/4 lb spinach
14 oz diced tomatoes
2 garlic cloves
1/2 t thyme
1/2 lb bread
2 c low-fat milk
2 oz romano cheese
4 eggs

Recipe Directions for Strata with Spinach

  1. Blanch spinach, drain, squeeze out water and chop. Toss with tomatoes and seasonings

  2. Slice bread and rub sides with cut clove of garlic

  3. Layer half the bread in greased baking dish, top with tomoato-spinach mixture. Sprinkle on cheese and repeat mixture.

  4. Beat together eggs and milk. Add salt and pour over bread mixture. Bake for 40-50 minutes.
