A layered breakfast or brunch casserole. Can be assembled the night before and baked in the morning.

Recipe Ingredients for Strata

4 oz Italian sausage, removed from casing and browned
1/2 cup onions, chopped
4 oz Italian bread
4 eggs
1 cup milk, non fat
1 tbs parsley, fresh, finely minced
1 dash salt
1/4 tsp pepper
2 cups potatoes, grated

Recipe Directions for Strata

  1. Saute the onions with the sausage. Cool and set aside

  2. Beat the eggs with the milk, salt & pepper and parsley.

  3. Place the bread into the bottom of a 9" x 9" prepared baking dish.

  4. Cover evenly with the sausage mixture

  5. Top with the raw, grated potatoes

  6. Pour the egg mixture over

  7. Refrigerate from 1 hour to overnight

  8. Bake at 350f for 45 minutes, or until the potatoes are brown.
