Frugal, tasty way to use up stale bread. This is a good take-along breakfast or lunch food, since it is easy to pack, reheats well, and contains a good mix of veggies, protein, and carbs. Swap out whole milk for skim, reduce cheese or use low fat fontina, use egg beaters instead of whole eggs, increase veggies to reduce fat and add fiber.

Recipe Ingredients for Strata - Full fat version

3/4 c whole wheat flour
3/4 c white flour
4 eggs
2 c whole milk
1 tsp nutmeg
1 1/2 c shredded cheese, half fontina, half gorgonzola
2 tsp dried marjoram or rosemary
4 T olive oil
5 cloves garlic, minced
16 oz spinach, frozen
8 oz mushrooms
28 oz tomatoes, diced canned
1 salt, pepper to taste

Recipe Directions for Strata - Full fat version

  1. ( use half loaf of homemade half-wheat bread, or 10 thin slices of stale bread)

  2. ( I use a 9x13 / 3 Qt pyrex casserole for this dish )

  3. slice bread thinly

  4. simmer diced tomatos with garlic for 20 minutes.

  5. While simmering, slice mushrooms, boil water for (frozen) spinach.

  6. When water boiling, cook spinach (5 min), then add minced garlic, salt and pepper to taste.

  7. Heat pan, use olive oil to saute mushrooms. When they start to color, season them as well with pepper and garlic.

  8. Grate mix of fontina and gorgonzola cheese.Sprinkle with marjoram or rosemary.

  9. Mix milk, eggs, nutmeg in separate bowl.

  10. Assemble casserole in layers - tomatos, bread, spinach, fontina+spices, bread, mushrooms, fontina+spices, tomatos, bread, tomatos, gorgonzola. Pour egg and milk mixture over the top. Let sit for a while ( 0 min - 4 hours, in refrigerator ) then bake 1 hour in preheated 375 degree oven, until golden and puffy.
