Light, delicious, and very yummy with some countrty bread and pecorino sprinkled on top.

Recipe Ingredients for Stracciatella

6 cup Soup, chicken broth, canned, less/reduced sodium
10.65 oz Penne Dry
15 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 cup chopped Scallions
3 cup Arugula
4 large Egg, Whole
2 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for Stracciatella

Cook pasta, chickpeas, and the white part of the scallions in the broth until boiling. Then add arugula. Once arugula is wilted, slowly but steadily add the beaten egg while stirring. Sprinkle the rest of the scallion greens on top, along with the lemon juice (and pepper if you wish). Garnish with cheese and bread. Eat!
