Stovetop Vegetarian Paella - from Whole Foods

Recipe Ingredients for Stovetop Vegetarian Paella

2 tbsp olive oil
1 onion, chopped
4 cloves garlic
1 c basmati rice
1/4 tsp saffron strands
14 oz diced tomatoes, drained
1 bell pepper
1 c lima beans, frozen
2 c vegetable broth
1 c peas, frozen

Recipe Directions for Stovetop Vegetarian Paella

Heat olive oil over medium heat in large pan. Saute the onion and garlic for three minutes. Add rice and saffron, stirring constantly for another minute. Add tomatoes, bell pepper, and lima beans. Stir for another minute. Add broth and bring to boil. Boil for two minutes then reduce heat to simmer. Cover and cook for 15 minutes. Stir in frozen peas and continue cooking until peas are just tender and liquid is absorbed.
