Stovetop Rice Pudding Recipe

Rice pudding with dried cranberries.

Recipe Ingredients for Stovetop rice pudding

3/4 cup uncooked white rice
2 cups 1% milk, divided
1/4 cup splenda for baking
1/4 teaspoon salt
1 egg, beaten
2/3 cup dried cranberries
1 tablespoon butter
3/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Recipe Directions for Stovetop rice pudding

  1. 1. In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

  2. In same saucepan, combine the 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar substitute and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.

  3. FOOTNOTE

  4. I used Z-sweet, not Splenda; it's another measure for measure non caloric sweetener, and actually has less calories than Splenda, so the count may be off. If you like you pudding sweeter (this version is not as sweet as some might expect), add a little more sugar substitute. Can Also use white sugar.
