Delicious pot roast with veggies that cooks in one pot. Dripping make gravy in the same pot.

Recipe Ingredients for Stovetop Pot Roast

3 pound chuck roast
3 cloves garlic
2 T olive oil
1 large onion, 1/2" slices
1 c celery, 1/2" slices
2 turnips, peeled and cut into chunks
4 c water
2 beef bouillon cubes
4 medium potatoes, peeled and quarted
1 pound carrots, cut into chunks
1/2 pound frozen green beans
1/2 pound crimini mushrooms, sliced
3 T cornstarch
1/4 c cold water
1 salt and pepper to taste

Recipe Directions for Stovetop Pot Roast

  1. Cut slivers in roast and insert garlic cloves. In large pot brown roast on all side in oil over medium heat.

  2. Remove roast from pan. Add onion, celery, and turnips to pan. Place raost on top of veggies. Add water and bouillon cubes. Cover and bring to a boil. Reduce heat and simmer for 2 hours.

  3. Add potatoes, carrots, and beans. Cook for 45 minutes. Add the mushrooms and cook an additional 15 minutes. Remove to serving platter and .keep warm.

  4. Skim fat from pan juices. Combine cornstarch and water until smooth. Add to pan juices. Bring to a boil and cook for 2 minutes or until thickened. Season with salt and pepper
