Rachel Ray's Sausage, Peppers and Onions Stoup

Recipe Ingredients for Stoup

2 lbs Italian Sausage
3 tablespoons Extra Virgin Olive Oil
4 cloves garlic
4 chili peppers, anahiem
2 Onions, thinly sliced
2 tablespoon balsamic vinegar
4 cups chicken stock
30 ozs tomatoes, fire roasted
1/4 cup parsley leaves
1/2 cup basil leaves, torn

Recipe Directions for Stoup

  1. Heat olive oil in deep skillet, add sausage (hot or mild) and brown a few minutes. Add finely chopped garlic, seeded and thinly sliced Anahiem peppers, onions and cook until soft.

  2. Deglaze pan with vinegar, stir in stock and crushed or diced fire roasted tomatoes. Reduce heat to simmer and cook 5 minutes more. Then stir in parsley and basil.

  3. Optional: Serve with shredded Parmigiano-Reggiano cheese on top.
