Recipe Ingredients for Stir Fry of Swiss Chard, Red Peppers, and Noodles

8 ounces soba noodles
3/4 cup low sodium chicken broth
2 cups sliced onions
2 cups chopped cooked skinless chicken breasts
2 cloves garlic,minced
1 sweet red pepper, julienned
3 cups red swiss chard, stems and leaves, chopped
2 teaspoons 5-Pepper Hot Pepper Oil
1 tablespoon tahini
2 teaspoons reduced-sodium soy sauce

  4. Cook the noodles according to package directions; drain well.

  6. Meanwhile, coat a 10" no-stick skillet with no-stick cooking spray; set it over medium-high heat. When the skillet is hot, add 1/4 cup of the broth; bring to a boil. Add the onions, chicken, garlic, peppers and chard; cook and stir for 3 minutes, or until the onions are soft. Add the remaining 1/2 cup of broth; cover and cook for 4 minutes, or until the liquid has almost evaporated.

  8. In a small bowl, mix the hot-pepper oil, tahini and soy sauce; add to the stir-fry. Toss with the noodles.
