drain pineapple and reserve 1/3 cup of juice for sauce

Recipe Ingredients for Stir Fry Sweet & Sour Chicken

432.33 grams pineapple chunks in juice (14 oz. can)
10 grams cornstarch (1tbsp)
3 tbsp white vinegar
1 tbsp honey
1 tbsp vegetable oil
1 pound boneless skinless chicken breast (3 breasts)
1 medium green pepper
1 medium onion
1 1/4 cups shredded carrots (coursely)

Recipe Directions for Stir Fry Sweet & Sour Chicken

  1. Mix reserved juice, cornstarch, vinegar & honey and set aside.

  2. Heat wok or pan over high heat. Add 1 tbsp of oil: rotate to coat sides. Add chicken; stir-fry about 4 minutes until no longer pink. Remove chicken from pan; keep warm

  3. Add 1 tbsp of oil to wok; rotate to coat sides. Add peppers and onion and stir-fry 1 minute.

  4. Add cornstarch mixture and carrots to wok. Cook and stir about 1 minute ubtil mixture thickens.

  5. Stir pineapple and chicken in; cook until heated through.

  6. Serve over rice or noodles.
