Quick and easy meal for middle of the week.. good for using up left over veggies

Recipe Ingredients for stir-fry shrimp and veggies

1 red pepper
1 yellow pepper
1/2 large onion
1 cup sliced carrot
1/8 cup soy sauce
3 tbsp sesame seed oil
1 tbsp sugar
1/4 cup mirin
1 tbsp garlic
1 tbsp ginger
200 g broccoli
500 g shrimp

Recipe Directions for stir-fry shrimp and veggies

  1. mix the garlic, ginger, sugar, mirin, soy sauce and sesame seed oil.

  2. heat a wok to med/high heat

  3. add liquid mixture to pan when hot and let reduce by approximately half.

  4. coarse chop all vegetables

  5. stir fry until just heated through and starting to go tender.

  6. add shrimp

  7. cook until shrimp cooked through.

  8. serve over rice or noodles
