Recipe Ingredients for Stir-Fry Shrimp and Asparagus

1 lb shrimp, cleaned and peeled and cooked
2 tbsp soy sauce
1 tsp rice vinegar
1 tbsp peeled, grated fresh ginger
1 tbsp sesame seeds
1 tbsp canola oil
1 lb. asparagus, trimmed and cut diagonally into 2-inch pieces
1 pt cherry tomatoes, halved
1 tsp sesame oil

Recipe Directions for Stir-Fry Shrimp and Asparagus

  1. Stir together soy sauce, rice vinegar, and ginger; set aside in a bowl.

  2. In a pan, medium-high heat, toast sesame seeds until golden. Transfer to bowl.

  3. Heat oil in a large nonstick skillet over medium-high heat. Add asparagus and sauté 5 minutes, stirring frequently. Add shrimp and tomatoes and cook 2 minutes, stirring frequently. Stir soy-sauce mixture and shrimp into asparagus mixture; cook 1 minute to heat through. Remove skillet from heat; stir in sesame oil.

  4. Serve stir-fry mix with cooked brown rice. Sprinkle with sesame seeds. Enjoy!
