Lunch/Dinner Served with a whole wheat tortilla, guac dip or better than sour cream

Recipe Ingredients for Stir Fry

1 cup brown rice
2 1/2 cups onions
2 1/2 cups green peppers
3 1/2 cups corn
2 cups water
1 tbsp pepper
1 tbsp garlic salt
2 1/2 cups black beans
3 cups lettuce

Recipe Directions for Stir Fry

  1. Brown brown rice alone for a few minutes

  2. Boil 2 cups of water with rice for 20 minutes

  3. Add veggies of choice

  4. Cook for 30 minutes (or until done)

  5. Serve on wheat tortilla shell with a dip
