chicken and vegetable simple stir fry (clean out your veggie drawer)

Recipe Ingredients for Stir Fry

6 oz spaghetti noodles
1 cup broccoli
1 cup red pepper
1 cup mushrooms
1 cup carrots
1/4 cup soy sauce
1/2 cup low sodium chicken broth
1 cup chicken breast
2 tablespoons olive oil
2 tsp corn starch

Recipe Directions for Stir Fry

  1. chop all vegetables and dice or strip chicken

  2. one tablespoon olive oil in skillet and stir fry chicken

  3. remove chicken until cooked through

  4. add all vegetables stir fry until softened

  5. combine soy sauce and chicken broth with corn starch and add to pan until thick and bubbly. Add chicken back in.

  6. Meanwhile boil noodles per directions and add to stir fry at end
