Stir fry eggplant with onions and tomatoes over noodles

Recipe Ingredients for Stir fry eggplant

2 cups chopped eggplant
2 cups chopped tomato
2 cups chopped onion
3 tablespoons oil
2 teaspoons soy sauce
1/8 teaspoon hot sauce
1/8 teaspoon vinegar
1 tablespoon garlic
1/2 pound dry noodles

Recipe Directions for Stir fry eggplant

  1. Boil noodles

  2. Heat pan with 2 tablespoons of oil

  3. Add onions and cook until lightly browned.

  4. Add eggplant and cook until it starts to change color.

  5. Add tomato and cook until it starts to disintegrate.

  6. Add rest of ingediants including 1 tablespoon of sesame oil.

  7. Serve over noodles
