a great recipe - not spicy, with heaps of vegetables. I'd recommend removing the ginger for kids!

Recipe Ingredients for Stir Fry Chicken & Vegetables

350 g chicken breast
50 g red capsicum
50 g green capsicum
1 carrot
30 g raw cashews
20 g ginger
1 tablespoon soy sauce
1 tablespoon olive oil
1 stalk celery
1 onion

Recipe Directions for Stir Fry Chicken & Vegetables

  1. Dice all vegetables into "stir-fry size"

  2. Juilenne ginger

  3. Brown chicken, ginger and onion.

  4. Add other vegetables, stiring constantly.

  5. Add soy sauce at end.
