Kind of like sweet'n'sour chicken on basmati rice

Recipe Ingredients for Stir fry chicken with pineapple & cashew

350 g chicken, cut into strips
320 g pineapple, fresh, cut into 2x2 cm cubes
5 garlic cloves, finely chopped
115 g onions, coarsely chopped
1 red pepper, cut into strips
1 yellow pepper, cut into strips
80 g cashew nuts
10 g salt
6 g chili pepper, hot, red, finely chopped
200 g basmati rice
3 tbsp soy sauce
10 g sugar
2 tbsp sesame oil
2 tbsp coconut, dried flakes

Recipe Directions for Stir fry chicken with pineapple & cashew

  1. Start cooking the rice.

  2. Stir-fry garlic, chili and onions in oil for 2 mins.

  3. Remove from wok.

  4. In small pan: Roast nuts & coconut flakes until brown.

  5. Stir-fry chicken and peppers until chicken starts turning brown (2-3 mins.)

  6. Add garlic, chili & onion mix, soy sauce, sugar, pineapple, nuts and coconut flakes. Stir fry for another 2 minutes.

  7. Serve & enjoy :)
