Recipe Ingredients for Stir-Fry Beef with Bok Choy

12 oz lean beef, sliced thin
2 cups red bell pepper, matchsticks
6 cups bok choy, chopped (divide stems from tops)
1 cup green onions, chopped
2 tbsp fresh ginger, minced
2 cloves garlic, minced
2 tbsp vegetable oil
1 tbsp soy sauce
1 tbsp Brown Rice Vinegar, Organic
2 tsp dark sesame oil
1 tbsp fish sauce
1 tbsp red pepper flakes

Recipe Directions for Stir-Fry Beef with Bok Choy

  1. Preheat wok over high heat, add 1 tbsp vegetable oil. When oil shimmers add 1/3 of beef strips, stir rapidly until browned. Remove to clean dish and stir fry remaining beef in 2 batches.

  2. Reduce heat if oil smokes too much. Add remaining vegetable oil and bok choy stems, stir fry until slightly softened, remove and set aside. Add red peppers, when peppers are browning add garlic and ginger.

  3. Add bok choy stems back and when hot, add tops. Stir until tops are turning bright green, add onions and when onions are bright, add meat back in.

  4. Stir over high heat and add (one at a time) sesame oil, rice vinegar, fish sauce, soy sauce and red pepper flakes. Shut off heat and serve over rice or rice noodles. (1 serving= 1 cup WW 5pts)
