Stir-Fry Baby Bok Choy Recipe

Baby bok choy has a sweeter flavor than adult varieties. Original recipe called for 1 1/2 tsp of vegetable oil for stir frying. For a lighter taste, I have substituted the vegetable oil with olive oil and cut the amount of oil dramatically. Low-sodium chicken broth can be used in place of water. Original recipe called for 1/4 tsp salt, I omitted it.

Recipe Ingredients for Stir-fry Baby Bok Choy

250 g Baby Bok Choy
2 tbs Soy Sauce
1/4 tsp ginger
1 tsp sugar
1/4 cup water
1 tsp olive oil, for stir fry
1/4 cup water

Recipe Directions for Stir-fry Baby Bok Choy

  1. Wash the baby bok choy and drain. Separate the stalks and leaves. Cut the stalk diagonally and cut the leaves across.

  2. Heat wok and add oil. When oil is ready, add ginger and stir-fry briefly, for about 30 seconds, until the ginger is aromatic. Add the bok choy, adding the stalks first, and then the leaves. Stir in the soy sauce, sugar, and salt, and stir-fry on high heat for 1 minute.

  3. Add the water or stock, cover the wok and simmer for about 2 minutes.
