Recipe Ingredients for Stir-Fried Zucchini, Tofu & Tomatoes

2 T cornstarch
114 g vegetable stock
4 T Restaurant Series Black Bean Sauce
2 t rice wine vinegar
2 t sesame oil
2 T extra virgin olive oil
2 t minced ginger
1 T minced garlic
2 small Squash, Summer, Zucchini, Includes Skin
6 medium (4-1/8" long) Onions, Spring Or Scallions
18 oz Tofu, Extra Firm
2 cup Organic Cherry Tomatoes

Recipe Directions for Stir-Fried Zucchini, Tofu & Tomatoes

  1. MAKE THE SAUCE: In a small bowl, stir together the cornstarch and broth until smooth. Stir in the oyster sauce, vinegar, soy sauce, and sesame oil. Reserve until needed.

  2. MAKE THE STIR-FRY: Heat a large heavy wok (or Dutch oven) over high heat. Add the vegetable oil and tilt to coat the wok. Add the ginger and garlic and cook for 10 seconds. Add the quartered, sliced zucchini and stir-fry for 1 to 2 minutes, to lightly brown and soften slightly. Add the sliced scallions and stir-fry for 20 seconds. Add the cubed tofu and stir-fry for 1 minute. Add the halved tomatoes and stir-fry for 30 seconds to 1 minute. Give the sauce a stir and pour it in. Cook, stirring, until thickened and boiling, 30 seconds to 1 minute. Turn out onto a serving dish and serve right away.
