Shrimp stir-fried with mixed vegetables in ginger-hoisin sauce - serve with brown rice

Recipe Ingredients for Stir-fried shrimp with vegetables

2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 1/2 teaspoons soy sauce
2 teaspoons grated fresh ginger
2 teaspoons water
1 pound shrimp, peeled
2 cups asparagus, sliced into 1 inch pieces
1 red bell pepper
1 cup mushrooms
1/2 red onion, chopped
2 carrots, sliced
2 tablespoons oil, divided

Recipe Directions for Stir-fried shrimp with vegetables

  1. Mix first 5 ingredients for sauce and set aside.

  2. Add 1 tablespoon of oil to non-stick skillet or wok and heat on high. Stir-fry shrimp until just pink and mostly cooked (2-3 minutes). Remove shrimp from pan.

  3. Add another tablespoon of oil. Stir-fry vegetables. Start with asparagus and carrot. After a few minutes add red onion and bell pepper. When vegetables are cooked, return shirmp to pan, add sauce and mushrooms. Stir fry until shrimp are completely cooked, mushrooms are softend and sauce is mixed well (about 2 minutes). Serve over brown rice.
