Stir Fried Pork with Raisin and Peanut Rice

Recipe Ingredients for Stir Fried Pork with Raisin and Peanut Rice

3/4 c pineapple juice
1/2 c water
3 T hoisin sauce
1 1/2 tsp sugar
3/4 tsp chili powder
3 T raisins
3 T peanuts
2 T red bell pepper
1 cups brown rice
1 lb pork tenderloin
1 clove garlic
1/8 tsp pepper

Recipe Directions for Stir Fried Pork with Raisin and Peanut Rice

  1. In a small saucepan, combine pineapple juice, water, hoisin sauce sugar and chili powder. Bring to a boil, reduce heat and simmer uncovered for 8 minutes. Set aside.

  2. In a small bowl, combine raisins, peanuts, and bell pepper. set aside.

  3. Pour equal amounts of dipping sauce into 4 small bowls. Combine raisin mixture and rice in a decorative bowl and toss to blend thoroughly. Cover to keep warm.

  4. Coat a large nonstick skillet with cooking spray and place over high heat for 1 minute. Add pork, garlic and pepper and stir fry for 5 minutes or until all liquid is absorbed. Place 1/4 of brown rice onto each of 4 plates. Top each with 1/4 of the pork.
