Recipe Directions for Stir fried chicken and vegetables with brown rice

  1. Heat olive oil in saute pan; add chicken and stir fry for two minutes. Remove to bowl.

  2. Add onion and cook 1 minute

  3. Add minced garlic, broccoli and carrots; stir fry for two minutes

  4. Add red pepper and chicken broth; cover and cook for three minutes

  5. Serve over cooked brown rice
