Recipe Ingredients for Stir-fried Chicken with Lime and Coconut

115 g chicken breast fillet
19 g lime juice
100 ml light coconut milk
1/2 tablespoon olive oil
5 g pepper
1/2 tablespoon Thai fish sauce
2 tablespoons fresh coriander leaves
2 medium spring onions, shredded

Recipe Directions for Stir-fried Chicken with Lime and Coconut

  1. Chop the chicken into bite-sized pieces and place them in a bowl with the lime juice and zest.

  2. Stir well and leave them to marinate for an hour.

  3. When ready to cook the chicken, heat oil in the pan or wok over a high heat, add the chicken pieces and stir-fry for 3-4 minutes, until golden.

  4. Then add the chilli, stir-fry for 1 more minute, and add the coconut milk, fish sauce and half the coriander and spring onions.

  5. Cook for another 1-2 minutes, then serve with Thai fragrant rice and the remaining coriander and spring onions sprinkled over.
