This dish can be substituted with any vegetable including adding sliced carrots, broccoli and ginger! Try not to overload wok with everything at once!!!

Recipe Ingredients for Stir Fried Chicken & Brown Rice

1/2 lb chicken breast
8 oz mushrooms
1 cup of shallots
1 tablespoon of fish sauce
2 tablespoons of low sodium soy sauce
1 1/2 cups of brown rice
1 tablespoon of peanut oil
1 tablespoon of garlic
1/2 cup of spinach

Recipe Directions for Stir Fried Chicken & Brown Rice

Heat wok and add shallots and stir quickly for 5 to 7 mins. Add chopped garlic and stir for 1 min. Remove onion and garlic for pan and set aside. Add cooked spinach and brown rice. Add fish sauce and soy sauce and stir for 7 mins until rice is slightly browned. Remove and add mushrooms. Add a little salt and a little bit more peanut oil if needed. Stir quickly at high heat until mushrooms slightly brown. Add cooked chicken to pan and stir fry for 3 mins to heat through then add everything back into the wok and top with a little sesame oil and heat through for another minute.
