Recipe Ingredients for Stir-Fried Chicken with Broccoli and Red Peppers

1 tbsp Olive oil
1 cup Onion, sliced and cubed
1 cup Broccoli
1 cup carrots, thinly sliced
1/4 cup Apple Juice
1 tsp sesame oil
1 cup sweet red pepper, cut into 1 in cubes
2 tbsp soy sauce
1/2 cup frozen peas
8 oz chicken breast, boneless, skinless, cut into 1/2 in pieces

Recipe Directions for Stir-Fried Chicken with Broccoli and Red Peppers

  1. Heat a large nonstick skillet over medium heat. add 1/2 Tbsp of oil, and 1/2 Tsp os sesame oil, Onion; and cook 2 min. Add chicken and stir-fry until starting to brown about 3 to 4 min. remove to a plate.

  2. Add remaining oil, apple juice, carrots, peas, pepper and broccol to same skillet; stir-fry for 4 min. Add chicken back to skillet, pout in soy sauce and cook. stirring until chicken is cooked through, about 5 min more' ltoss with remaining sesame oil. and serve. Yields about 1 3/4 cups
