Recipe Ingredients for Stir-fried Chicken and Bok Choy

10 ounces boneless skinless chicken breast
1/2 teaspoon salt, divided
1 dash white pepper
4 teaspoons cornstarch, divided
10 ounces bok choy
4 ounces snow peas
1 small red bell pepper
1/2 cup sweet onion, quartered and halved
2 tablespoons oyster sauce
1/2 teaspoon sugar
3 tablespoons vegetable oil, divided
1 teaspoon fresh ginger, finely chopped
1 teaspoon garlic, minced
1/2 cup chicken broth

Recipe Directions for Stir-fried Chicken and Bok Choy

  1. 1.Cut the chicken into 2 X 1/2-inch slices. Sprinkle 1/4 teaspoon salt, the white pepper, and 1 teaspoon cornstarch over the chicken pieces and set aside.

  2. 2.Wash the bok choy very well and dry with paper towels. Trim off most of the leaves (save for soup or other use). Cut the bok choy stalks diagonally into 1/2-inch slices.

  3. 3.Remove the strings from the snow peas. Bring a small saucepan of water to a boil. Add the snow peas, cover, and cook for 1 minute. Immediately drain and rinse in cold water; drain.

  4. 4.Core and seed the red bell pepper and cut into 2 X 1/2" strips.

  5. 5.In a small bowl, mix together the oyster sauce, sugar, the remaining 1 tablespoon cornstarch and 1 tablespoon water.

  6. 6.Heat a wok or nonstick skillet over high heat. Add 2 tablespoons vegetable oil, the ginger, garlic, and chicken. Stir-fry the chicken until it turns white, about 2 minutes. Remove the chicekn from the wok and place in a bowl. Reheat the wok and add the remaining 1 tablespoon vegetable oil. Add the bok choy (and onion pieces) and stir-fry for 1 minute. Add the remaining 1/4 teaspoon salt, the chicken broth, and the cooked chicken; stir and cook until the sauce comes to a boil. Stir in the cornstarch mixture and cook 1 minute to thicken. Add the red pepper and snow peas; continue cooking for 1 more minute. Serve.
