Recipe Ingredients for Stir-Fried Chicken with Almonds

1 1/2 pounds boneless chicken breast
1/3 cup chicken broth
2 tbsp soy sauce
4 tsp cornstarch
2 tbsp peanut oil
1/4 cup almonds, sliced
1 cup green onions, sliced
6 oz sugar snap peas
2 cups sliced fresh mushrooms

Recipe Directions for Stir-Fried Chicken with Almonds

  1. Stir chicken broth and soy sauce into cornstarch; set the soy sauce-broth mixture aside.

  2. In wok or skillet, heat 1 tbsp oil over high heat. Add almonds and stir-fry 1 minute or until beginning to brown; remove almonds.

  3. Add 1 teaspoon of oil, then add chicken and stir-fry 3 minutes or until done; remove chicken. You may have to do this in batches in order to keep stir-fry heat high.

  4. Add 1 teaspoon of oil, then add green onions and pea pods and stir-fry 1 minute; remove vegetables.

  5. Add last teaspoon of oil, then add mushrooms and stir-fry 1 minute.

  6. Stir the broth mixture; add to mushrooms. Cook and stir till bubbly. Stir in chicken and vegetables. Cover; cook 1 minute. Stir in almonds.
